When planning an event that requires food & beverages, don't choose a menu from a standard Hotel catering menu package. You want to make your event different from the standard banquet. Meet with the Catering Manager and Chef of the venue to see what the latest trends are or what unique dishes they can create for your event. Before meeting with these professionals, make sure that you have a budget in mind, so that the Catering Manager and Chef know what they have to work with. Also, make sure that you take in consideration people's food requirements/allergies such as: gluten-free, vegetarian, lactose intolerant, or what ever special needs people might have.
In terms of beverages, check to see if the venue can prepare a signature drink along with beer, wine, a full bar, soft drinks and juices.
